Start with this:

Prepare as directed adding 1/2 cup olive oil. Place in waffle griddle, add toppings same as muffins. Told you it was EASY! :) Delicious.

Followed chocolate chip cookie recipe (below) - left out chips and added icing. Delicious cookie sandwich :)




SIX LAYER COOKIE BARS
I've been a bit pressed for time this week, but love the idea of having fresh homemade cookies for my customers. This morning I made an old favorite that's hard to mess up - Six Layer Cookie Bars. Yummy!

SIX LAYER COOKIE BARS (MAGIC COOKIE BARS)

1 1/2 cups graham cracker crumbs
1 stick butter (not margarine)
1 can Carnation sweetened condensed milk
1 cup chocolate chips
1 cup butterscotch chips
1 cup coconut
Pecans (optional)


Preheat oven to 350 (325 for glass pan). Melt stick of butter in pan in warm oven. Add graham cracker crumbs and press into pan. Add sweetened condensed milk evenly on top of crust. Follow with remaining ingredients. Bake for 20 to 25 minutes. Cool and slice.


That was easy!




OLD FASHIONED SHORTBREAD COOKIES

Last week I made homemade chocolate chip cookies for customers and that seemed to be a hit, so this week I tried (for the first time) shortbread cookies. They aren't too sweet and kind of remind me of a 'cake' cookie .... wait a minute! I don't like cake! Oh well, these turned out great and I'm glad I made them. I actually altered the recipe as I went along because there was no way I was going to get as much flour mixed in as it called for. Recipe below -






SHORTBREAD COOKIES - (my altered recipe)

2 Sticks of butter (not margarine) (softened at room temperature)
1 Cup sugar
2 Tablespoons vanilla
3 Cups all purpose flour

Beat butter and sugar at high speed until fluffy. Mix in vanilla until well blended. Slowly add flour (which the recipe called for 4 cups of and I only used 3). The original recipe also said to 'run dough through a coookie press' (like I have one of those! hahaha). I just used a rolling pin :) Place cookies 1-inch apart on sprayed pan (I used Baker's Joy).

Bake at 350 for 10-12 minutes. (I used Pampered Chef stone and after preheat, took about 10 minutes).

For the toppings - I used mini chocolate chips placed on before baking, one square of Hershey's bar placed on in middle of baking and then spread with knife upon completion, and confectionate sugar.


CHOCOLATE CHIP COOKIES

I make really, really, really! good chocolate chip cookies. Just made three delicious batches and froze some batter for next time the craving hits us!

I always double the recipe below:

3/4 cup (3/4 stick) Crisco butter-flavored vegetable shortening sticks
1-1/4 cups firmly packed light brown sugar (1/2 box)
2 Tablespoons milk (I use soy milk)
1 Tablespoon vanilla flavoring
1 large egg (I use Egg Beaters)
1-3/4 cups all-purpose flour
1 teaspoon salt
3/4 teaspoon baking soda
1 cup milk chocolate chips*
* I also add white chocolate or butterscoth chips, M&M's, Reeses Pieces, or whatever we are in the mood for.

Preheat oven to 350oF.
Combine first four (4) ingredients in large bowl. Beat with mixer at medium speed until well blended. Slowly mix egg into creamed mixture.
Combine flour, salt, and baking soda. Mix into creamed mixture until well blended.
Stir in chocolate/butterschotch/white chocolate chips.
Drop by rounded spoonfuls of dough 2 to 3 inches apart on ungreased baking stone. Bake at 350oF. for 7 to 9 minutes. DO NOTE OVERBAKE
Makes about 3 dozen cookies.
